Bushwakker 2026 Brewer’s Dinner – The Art of Smoke & Beer: An Adventure of Fire, Flavour and Fermentation!
1st Course
Pale Ale Smoked Chicken Ravioli
Delicate house-made ravioli infused with Regina Pale Ale, generously filled with tender chicken slow-smoked in our custom 800-litre converted beer tank smoker. Nestled in a vibrant herb tomato sauce, this dish is elevated with RPA-marinated mushrooms and a flourish of fresh local microgreens, delivering balanced smoke, acidity and garden freshness.
Paired with: Chinook Extra Special Bitter – a bold, hop-forward British style ale to complement and enhance the savoury depth of the dish.

2nd Course
Northern Smoked Diefenbaker Trout
Locally sourced fresh trout gently house-smoked to highlight its natural richness. Served atop a mixed spring greens salad accented with tri-coloured tomatoes, pea shoots, curly green onions, dill herb goat cheese and thin sliced cucumber ribbons. Finished with a bright Northern Lights Lager vinaigrette, pickled fennel and an artisan crispy lentil cracker for texture and contrast.
Paired with: Blackberry Grapefruit Sour – a vibrant Bushwakker debut, bursting with citrus and berry notes to refresh the palate.

New York Irish Red Ale Roast
Succulent CAB Black Angus New York strip roast is house-smoked to perfection, then finished with a rich Dungarvon Irish Red Ale gravy. Accompanied by a silky smoked carrot and yam purée, crispy parmesan fingerling potatoes and fresh broccolini, this course delivers depth, warmth and refined comfort.
Paired with: Baron Bock – a rich yet smooth, malty lager that enhances the roast’s caramelized and smoky character.

Deconstructed Smoked Tiramisu
A modern interpretation of the classic dessert! Featuring lightly smoked mascarpone and cream cheese, layered with Cheryl’s Blonde Ale – infused sponge cake and a rich mocha cookie crumble. Each element invites exploration of subtle smoke and balanced sweetness.
Paired with: Coffee Porter – deep, roasted notes of coffee and chocolate echo the dessert’s richness whilst adding a smooth, lingering finish.

Tickets to our May 7th Cinco de Mayo Week PREMIUM TEQUILA & MEZCAL TASTING are now available and are over half sold. $39.95 plus tax each. Three 100% blue agave tequilas and three unique mezcals will be evaluated. These special order bottles are tricky to find in Saskatchewan due to the very limited availability of these small batch, artisan, ultra-premium products. Our current Seasonal Menu has been humming right along for a few weeks now. We’ll be switching to a new summer seasonal menu in the coming weeks. So enjoy these delicious throwback delights while they are still available: Chef Mike Favourite Pizza, Classic Bushwakker Potato Skins, Baked Alaska, a traditional Bushwakker Clubhouse, Loaded Prime Rib Burger and our Cottage Pie too!

May 1: FIRST FIRKIN FRIDAY- SPECIAL CINCO DE MAYO WEEK PRE-KICKOFF EDITION! Don’t miss this decades-old Bushwakker monthly tradition. A piper from The Regina Police Services Pipes & Drums leads a keg (the firkin) of special ale throughout the pub in a procession. A guest volunteer tapper is selected to wield the handmade wooden maul affectionately named, The Mighty Firkin Wakker, and attempts to tap the keg in one mighty blow! This month’s “Cinco de Mayo Week Kickoff” firkin offering is a CAZADORES 100% BLUE AGAVE BLANCO TEQUILA – INFUSED BLACKBERRY GRAPFRUIT ALE! The fruity and refreshing Mexican suds-soaking spectacular takes place at 5:30 PM.

May 2: THE 9TH POETRY & A PINT PRESENTATION. We are delighted to have the Saskatchewan Writers’ Guild as a partner in this event. Enjoy a Saturday afternoon of poetry readings from some of Regina and area established and up-and-coming writers. Perhaps enjoy a slice of our special poet-inspired WHITE CHOCOLATE PASSION FRUIT CHEESECAKE featured dessert created just for the occasion! 3:00 PM – 4:00 PM.
A family-owned Lumsden distillery is putting Saskatchewan on the map

Based in Lumsden, Saskatchewan, one small distillery is making a lasting impact in Canada. Last Mountain Distillery is known for their one-of-a-kind Baldur’s Whiskey line and recently won gold, silver and bronze in one category in the Best Canadian Whiskey competition.
Distillery co-owner Meredith Schmidt explained, “We’re Saskatchewan’s first micro-distillery, so we’ve been making whiskey for longer than anybody else in the province and we have some of the oldest whiskeys in the province, which I think is pretty amazing and we’re really proud of. So to get the recognition from the blind taste test is really awesome for us. The distillery submitted bottles for each category in the event, which are blind taste tested and rated based on quality and taste.”
“The single-release, single-barrel whiskey is one-of-a-kind due to its ever-changing recipe. We didn’t want to make just one whiskey or one flavour profile. We’re passionate about all different types of whiskey, so playing with rye, wheat, corn, malt and barley, even making our own bourbon going back three or four or five, six years ago, we started making our own bourbon and our own sour mash starter” added co-owner Colin Schmidt.
One pub in Regina, Bushwakker Brewpub, has watched Last Mountain Distillery grow for years and is excited to see Saskatchewan being recognized when it comes to whiskey and vodka. Bushwakker bar manager, Grant Frew, stated, “To see Saskatchewan performing so well on the national and international stage, not only for Last Mountain Distillery, but there’s some other Saskatchewan distilleries that are doing very, very well, it’s a great sense of pride. Rah, rah, Saskatchewan!”
Bushwakker Brewpub has had their own success with Last Mountain’s vodka and after incorporating their whiskey, they’ve found the response has been positive. Frew explained, “Recently, they’ve been able to release their Baldur’s Line of whiskeys, and it’s not just one, there’s a number of different finishes, and the one that we are carrying is their batch number five, which is their bourbon style whiskey, and we’ve had great success with that product, people seem to really like it.”
The winning husband and wife duo have no plans of slowing their pace of creating new products anytime soon and say the recognition is reassurance that they’re moving in the right direction.
Schmidt added, “We’ve been making whiskey a really long time, and we’ve definitely always gotten some recognition for our whiskey, but to get gold, silver, and bronze in one category is pretty special.“
